One of my passions of the last decade has been baking. While I’ve always been something of a cook, I’ve been wary of baking because it has the potential to fail more than it succeeds and always at the worst possible time and with little potential to cover up the catastrophe of a sunken cake or a soggy pastry. However, I’ve stuck to it with gusto because I want to master the art that brings so much pleasure. Is there anything more rewarding than to pull a fabulous pie steaming from the oven or to see cooling on a rack the most perfect sponge ready for sandwiching and icing? I adore the whole petrifying process and I guess increasingly I’m enjoying more successes than flops as I gain confidence and fully grasp the concept of measuring properly and timing properly and good equipment.
